    Analisis Nilai Tambah Pengolahan Ikan Kembung Rebus di Kota Medan

    Abstract
    The objective of this research was to find out the process of boiled chub mackerel, to analyze the income of processing boiled chub mackerel, and to determine the added-value of the processing of boiled chub mackerel in the research area. The research area was determined purposely where the business was located. The samples were taken by using snowball sampling technique. The result of the research showed that the process of boiled chub mackerel in Medan was simple, the income of processing boiled chub mackerel to become chub mackerel in Medan was in high category and profitable; the income of aso boiled chub mackerel was Rp. 5,627,368.61 and kuring boiled chub mackerel was Rp. 5,902,728.61 where the BEP production of aso boiled chub mackerel processing was 34.20 kg and kuring boiled chub mackerel was 15.05 kg, while the BEP price of aso boiled chub mackerel was Rp. 30,785/kg and kuring boiled chub mackerel was Rp. 34,064/kg. The value-added of processing boiled chub mackerel in the research area was in low category: aso boiled vhub mackerel was 14.21% kuring boiled chub mackerel was 25.86%, less than 50%.
     
    Tujuan dari penelitian ini adalah untuk mengetahui bagaimana proses pengolahan ikan kembung rebus, untuk menganalisis pendapatan pengolahan ikan kembung rebus dan juga untuk menentukan nilai tambah yang dihasilkan dari pengolahan ikan kembung rebus di daerah penelitian. Penentuan daerah penelitian dilakukan secara purposive (sengaja), di daerah-daerah tempat berdirinya usaha tersebut. Metode pengambilan sampel yaitu dengan cara snowball sampling. Hasil penelitian menunjukkan bahwa : proses pengolahan ikan kembung rebus di Kota Medan masih tergolong sederhana, pendapatan pengolahan ikan kembung menjadi ikan kembung rebus per bulan di Kota Medan tergolong besar dan menguntungkan yaitu pendapatan ikan kembung rebus aso sebesar Rp. 5.627.368,61 dan ikan kembung rebus kuring Rp. 5.902.728,61 dimana diperoleh BEP produksi pengolahan ikan kembung rebus aso sebesar 34,20 Kg dan ikan kembung kuring sebesar 15,05 Kg, sedangkan BEP harga ikan kembung rebus aso sebesar Rp. 30.785/Kg dan ikan kembung rebus kuring sebesar Rp. 34.064/Kg, dan nilai tambah pengolahan ikan kembung rebus di daerah penelitian masih tergolong rendah yaitu ikan kembung rebus aso sebesar 14,21% dan ikan kembung rebus kuring sebesar 25,86% lebih kecil dari 50%.
