The application of 6 principles of sanitary hygiene in all sugarcane water traders did not meet health requirements (100%). E. coli content was found in all sugarcane water (100%), all ice cubes (100%), and all glass swabs (100%) with the highest germ count of 68 MPN per 100 ml and the lowest of 1.1 MPN per 100 ml, not meeting health requirements. The level of knowledge of traders about the hygiene and sanitation of sugar cane water processing with a good category amounted to 1 trader (16.7%), a sufficient category amounted to 3 traders (50%), and a poor category amounted to 2 traders (33.3%).
