Coffee is one of the main crops in North Sumatra which is cultivated by many people, including Karo Regency. This plant is an important plantation commodity in Karo Regency regional economy because it can contribute foreign exchange ti this area. Even though producitivity is high, and farmers have positive experiences in this sector, sustainability issues arise due to agricultural land experiencing soil erosion and water shortages. This happens because farmers do not have technical knowledge or practical experience regarding post-harvest processing of coffee. At the same time, the concept of Circular Economy (CE), is gaining ground considering its potential to enchance sustainable development. This research aims to apply CE to Karo coffee supply chain by further utilizing waste to become an alternative product to improve sustainable aspects, namely economic and social and reduce its impact on the environment. Apart from that, to support the implementation of CE, changes need to be made in the form of policy or managerial transformation using Soft System Methodology method. The result of this research is the application of CE to Karo coffee supply chain has the potential to be implemented. This is demonstrated by the increase in economic value obtained when using and reprocessing the resulting waste into alternative products.
