Background: Matoa leaf (Pometia Pinnata J.R. Forst & G. Forst) is one of the
plants that contains a large amount of macronutrients. The protein, carbohydrate
and fat content in matoa leaves can be used as an alternative in adding nutritional
value to processed products. By knowing the protein, carbohydrate and fat content,
it can determine the calorific value from a sample. One way that can be done to
increase the absorption of active ingredients in a product or formulation is by
making nanoparticles.
Purpose: To determine the total protein, total carbohydrate, crude fat and caloric
values in matoa (Pometia pinnata J.R. Forst & G. Forst) leaf nano powder samples.
Method: The steps of this study include sample preparation, sample identification,
preparation of simplisia, preparation of nanoparticle powder, characterization of
simplisia and nano powder, phytochemical screening of simplisia, determination of
nano powder total protein content, determination of nano powder total carbohydrate
content, determination of nano powder crude fat content, and determination of nano
powder calorific value.
Results: Characterization examination of matoa leaf simplisia and nano powder
met the requirements of the literature. Phytochemical screening examination of
matoa leaf simplisia contains alkaloid compounds, flavonoids, tannins, saponins,
glycosides, steroids. The results of determining the total protein content of matoa
leaf nano powder was 0.8571%, total carbohydrate content was 0.4617%, and crude
fat content was 2.6916% with a caloric value of 294,96 kcal/kg.
Conclusion: Matoa leaf nano powder contains total protein content of 0.8571%,
total carbohydrate content of 0.4617%, and crude fat content of 2.6916% with a
calorific value of 294,96 kkal/kg.
