dc.description.abstract | Hospital is one of the public places that provides health services. It usually
organizes food handling through nutritional installation to support its services. As
the food provided is addressed for inpatients, individuals with lowered immune
system, the hygiene and sanitation aspects must be taken into consideration. This
descriptive study was done to analyze the hygiene and sanitation of the food
handling process and assess the presence of Escherichia coli in food at the
nutritional installation in Embung Fatimah Regional Public Hospital Batam. Data
was collected through observation, interview, and laboratory tests. The study
showed that sanitation of facilities and infrastructure which include building,
cooking wares, and food has not met the requirements while the principles of
hygiene and sanitation of food handling has met the requirements as per Minister
of Health regulations Number 1096, year 2011 on Catering Hygiene and Sanitation.
Laboratory tests showed that no Escherichia coli were present in all food samples.
The behavior of food handlers, which include knowledge, attitude, and action on
the principles of food hygiene and sanitation, were good. Based on this study, it is
expected for the nutritional installation at RSUD Embung Fatimah to improve the
facilities and infrastructure, also to supervise and monitor the hygiene and
sanitation aspects. | en_US |
