    Abstract
    The dual milk pasteurization system based on ESP32, which utilizes the working principles of a flyback transformer and a 2000-watt water heater, is capable of improving milk quality in accordance with SNI 3141.1:201 standards. This device is constructed from several key components, including a 12-volt power supply, ZVS driver, flyback (ignition coil), a single-cylinder electrode, and a minimum ESP32-based microcontroller system. The milk container is a cylindrical tube with a height of 30 cm, a diameter of 20 cm, and a thickness of 0.5 cm. It is equipped with a 10 cm-long stirrer connected to an AC motor via Teflon to prevent malfunction. Based on testing results, the milk produced meets the quality standards of SNI 01-3141-1998, where the protein content in goat milk using the thermal method reached 10.82%, which is lower than the non-thermal method at 12.21%. Meanwhile, cow milk showed a protein content of 8.45% using the thermal method and 9.212% with the non-thermal method, both complying with the SNI 3141.1:201 quality standard. Therefore, milk pasteurization technology that combines a flyback transformer and a water heater offers advantages in terms of energy efficiency, fast sterilization, and effectiveness. This technology is expected to be adopted by local dairy farmers in the milk pasteurization process, helping to reduce production costs and improve milk quality, thereby supporting the development of the livestock sector in Indonesia.
