    Abstract
    Macroalgae Turbinaria sp is known to contain phenolic compounds with potential as natural antioxidants. These compounds can be utilized in the production of natural chitosan alginate-based packaging. The addition of Turbinaria sp extract in the packaging serves to inhibit the oxidation process that can cause a decline in quality and damage to food products. The objective of this study is to determine the antioxidant activity of natural chitosan alginate coatings with different levels of Turbinaria sp extract. To determine the optimal formulation of the extract for use as an antioxidant in natural coatings. The study was conducted from August to November 2024. The methods used included purposive sampling, phytochemical analysis, measurement of total phenol content using the Folin-Ciocalteu reagent, and antioxidant activity testing using the DPPH (2,2-diphenyl-1-picrylhydrazil) method. Phytochemical analysis results showed that Turbinaria sp extract positively contained alkaloids, flavonoids, tannins, steroids, terpenoids, and saponins. The highest total phenolic content was found in replicate 2 with a value of 387.163 GAE/g. ANOVA results indicated a significant effect (P<0.05). The antioxidant activity of each treatment yielded the lowest value in the control treatment (50.29%), 0.5% (67.07%), 1% (77.73%), and 1.5% (86.30%). The best formulation was obtained at a concentration of 1.5%, demonstrating high effectiveness in inhibiting oxidation
