Coffee is one of the leading commodities in the plantation sector, holding high economic value and contributing significantly to national revenue. One of the most renowned varieties is Arabica Gayo coffee, which originates from the Gayo highlands in Aceh. This coffee is not only a favorite in both domestic and international markets, but also serves as a primary source of livelihood for local farmers in the region. With its distinctive flavor and premium quality, Arabica Gayo belongs to the Coffea arabica species, which is generally distinguished from other types such as Coffea canephora (robusta) that are also widely cultivated in Indonesia. In fact, coffee-based beverages are enjoyed by people from all walks of life, and the culture of drinking coffee continues to grow. However, before coffee beans can be brewed and enjoyed, they must undergo a process called roasting. Roasting is a heating process that develops the flavor and aroma of coffee beans by applying specific temperatures. One of the most popular roast levels is medium roast, which offers a balanced taste between acidity and bitterness with a distinctive aroma. The quality of coffee beans can be improved if the roasting process is conducted at the right temperature and duration to achieve the desired moisture content and acidity. Traditionally, roast level determination relies on human observation, which is subjective and prone to inconsistencies. Therefore, an automated system capable of objectively and accurately identifying the medium roast level in real-time is needed. This study develops a mobile-based system that identifies the medium roast level using the You Only Look Once version 8 (YOLO V8) method. The system analyzes images of Single Origin Arabica Gayo coffee beans during the roasting process. The results indicate that YOLO V8 can accurately identify the medium roast level in real time, making the system effective in assisting roasters in maintaining consistent coffee quality.
