Tuna fish (Thunnus sp.) is a key commodity in Indonesia with steadily increasing demand, but it is prone to quality degradation due to physical, chemical, and microbiological damage during storage. This study aims to determine the effect of natural chitosan-alginate packaging with Turbinaria sp. extract on the physical, chemical, and microbiological quality of tuna meat during different storage periods. Turbinaria sp. samples were collected from three coastal locations in Sibolga and Tapanuli Tengah, while tuna was obtained from the Medan City Market. The study was conducted from August 2024 to May 2025. Data were
analyzed descriptively using SPSS and presented in graphical form. ANOVA results showed significant differences (Fhit>Ftab) in yield, pH, and histamine levels, while the Kruskal-Wallis test indicated significant differences (P-value≤0.05) in organoleptic properties, color, and peroxide value. The TVB-N parameter did not show significant differences (P-value≥0.05). Natural chitosan-alginate packaging with Turbinaria sp. extract was proven effective in maintaining tuna quality for up to 12 days of storage and has the potential to become an environmentally friendly packaging alternative for fishery products.
