dc.description.abstractSkipjack tuna (Euthynnus affinis) is a fishery commodity highly susceptible to quality degradation due to its high water and protein content, requiring appropriate post-harvest handling. This study aimed to evaluate the effect of natural layered packaging made from chitosan-alginate with the addition of brown macroalgae (Turbinaria sp.) extract on the quality of skipjack tuna during different storage periods. Quality parameters observed included physical (organoleptic, color, yield), chemical (pH, TVB-N, peroxide value, histamine), and microbiological (Total Plate Count and coliform) characteristics, measured on day 0, 4, 8, and 12 of storage. The study used a Completely Randomized Design (CRD) with three replications and a Turbinaria sp. extract concentration of 1.5%. Based on the research results, it was found that natural chitosan-alginate layer packaging with the addition of Turbinaria sp. extract was able to slow down the rate of decline in the quality of tuna fish. The ANOVA results showed that the storage period treatment had a significantly different effect (Fcount> Ftable) on most quality parameters such as pH, TVB-N, histamine, and TPC. While the organoleptic parameters and peroxide numbers based on the Kruskal Wallis non-parametric test showed that the storage period treatment had no significantly different effect (p value>0.05). Thus, the use of this packaging has the potential as an environmentally friendly packaging that is effective in maintaining the freshness and safety of tuna fish meat during cold storage.en_US
