dc.description.abstractThe study on the Potential of Biocoating Using Chitosan Alginate as the Main Material with the Addition of Bioactive Compounds from Brown Macroalgae Turbinaria sp. on the Quality of Skipjack Tuna (Katsuwonus pelamis) Meat during Different Storage Periods aims to determine the effect of the packaging on the physical, chemical, and microbiological quality of the fish. The research was conducted from January to May 2025 using a purposive random sampling method, with samples taken randomly. The parameters tested included organoleptic evaluation, color, yield, pH value, TVB-N, peroxide value, histamine, TPC, and total coliform. Data were analyzed descriptively and quantitatively using Microsoft Excel and SPSS v22 through One Way ANOVA (α = 0.05), followed by DMRT if significant. If the data did not meet parametric assumptions, the Kruskal-Wallis test was used. The results indicated that the coating had a significant effect on yield, pH value, peroxide value, and TPC (p < 0.05), all of which remained within safe limits up to 12 days of storage. Although the effect on color, TVB-N, and histamine was not significant (p > 0.05), all three parameters remained within acceptable thresholds until day 12. Meanwhile, the organoleptic evaluation were not significantly different (p > 0.05), and had already exceeded the permissible limits. In contrast, the total coliform count did not fully meet the ideal standards, indicating the need for further evaluation. This study is expected to be applicable to other fish commodities, to support the overall improvement of fish product quality.en_US
