This study aims to design and implement a temperature and humidity monitoring system in tempeh fermentation rooms using the ESP32 microcontroller and DHT22 sensor based on the Internet of Things (IoT). The background of this research is based on the importance of maintaining stable temperature and humidity during the tempeh fermentation process, where Rhizopus fungi as the main fermentation agent can only grow optimally at a temperature range of 25–35°C and relative humidity of 60–75%. This research focuses on monitoring temperature and humidity without considering other environmental factors such as light and airflow, and was tested in the fermentation room at the UKM Ratu Tempe factory in Tanjung Morawa. The test results show that the system is capable of monitoring temperature and humidity accurately and consistently, providing convenience for tempeh producers in maintaining optimal fermentation conditions. The implementation of this system also increases production efficiency, reduces the risk of fermentation failure, and helps standardize the tempeh production process. In addition, the use of IoT technology adds value by enabling automatic and integrated monitoring capabilities, thus supporting the development of a more modern and technology-based tempeh industry. Therefore, this ESP32 and DHT22-based temperature and humidity monitoring system can be an effective solution for improving the quality and productivity of the local tempeh industry.
