    Abstract
    Coffee is a widely encountered commodity in Indonesia. The country ranks among the world's largest coffee-consuming nations. The cooling of coffee beans is intended to stop the continuation of the roasting process following the initial roasting stageConventional (manual) cooling of 5 kg of roasted beans takes approximately 1 hour and 54 minutes to reach a temperature of 35°C. The objective of this research is to design and analyze the implementation of a temperature sensor as a control system in a coffee bean cooling apparatus. The experimental method involved setting a temperature setpoint of 35°C to observe the system’s performance in regulating the cooling process. The results demonstrated that the control system adjusts blower speed based on temperature: at >50°C, the blower operated at maximum speed (1.25 m/s); below 45°C, it reduced to low speed; and upon reaching the setpoint, the blower and DC motor automatically shut down. With this automated system, the cooling duration was reduced to 40 minutes. It is concluded that the temperature sensor accurately monitors bean temperature during cooling, and the control system operates effectively in managing the cooling process.
