dc.description.abstractRice is one of the main food commodities in Indonesia that plays an important role in meeting the nutritional needs of the community. This study aims to evaluate the nutritional content of local rice from three villages in Simalungun Regency, North Sumatra. The method used was proximate analysis based on the Indonesian National Standard (SNI) 01-2891-1992. This research was conducted at the Laboratory of the Center for Standardization and Services (BSPJI) and the Biotechnology Laboratory of the Faculty of Agriculture, Universitas Sumatera Utara from March 2025 to Mei 2025. By using descriptive method, this research directly observed the nutritional content of several local rice cultivars. The results showed that local rice from Simalungun Regency has significant diversity in nutritional content between cultivars, so this study can provide important information about the nutritional potential of local rice as a nutritious food source.en_US
