    Abstract
    Background: Nipah plants thrive in areas with large deposits of soil and mud in the downstream of rivers. Nipah sap can also be processed into nipah sugar, in nipah sap there are probiotic bacteria that have antibacterial effects. In this case, probiotics can act as natural antibiotics. Some lactic acid bacteria are able to produce organic acids, hydrogen peroxide, and bacteriocins. One of them is lactic acid bacteria, however, the morphological characteristics of lactic acid bacteria are not yet known. Objective: This study was conducted to determine the number of isolates obtained from the isolation of nipah sap. Method: Nipah sap was fermented on day-0, day-1, and day-2, then isolated and characterized morphologically and gram stained. Result: The results of the number of lactic acid bacteria isolates in nipah sap on day 0 were obtained at a dilution of 10-1 as many as 82 colonies, and at a dilution of 10-2 as many as 30 colonies, at a dilution of 10-3 as many as 5 colonies at a dilution of 10-4 as many as 4 colonies, at a dilution of 10-5 -10-6 there was no colony growth. On the 0th day of nipah sap, 103 colonies were obtained at dilution 10-1 , and 48 colonies at dilution 10-2, 38 colonies at dilution 10-3 , 5 colonies at dilution 10-4 , 4 colonies at dilution 10-5 , and 2 colonies at dilution 10-6 . On the 2nd day of nipah sap, 206 colonies were obtained at dilution 10-1 , and 93 colonies at dilution 10-2 , 93 colonies at dilution 10-3 , 3 colonies at dilution 10-4 , 1 colony at dilution 10-5 , and no colony growth occurred at dilution 10-6 . Conclusiont: 12 isolates of lactic acid bacteria were obtained with morphological characteristics in the form of Coccus and gram positive.
