Analysis of Hygiene Sanitation and Escherichia coli Content in Snack Food in Aur Village Medan Maimun Sub-District
Abstract
Snack food is in great demand by the wider community, but it does not rule out the possibility of snack food sold by food vendors being contaminated by microorganisms such as Escherichia coli bacteria. The purpose of this study was to analyze sanitary hygiene and the presence of Escherichia coli in snacks in Aur Village, Medan Maimun Subdistrict. This type of research is a descriptive survey by looking at sanitary hygiene and the presence of Escherichia coli in street food. The population in this study were all hawker food traders in Aur Village neighborhood III and IV as many as 12 traders. Sampling using Total Sampling technique which is 12 traders. Data collection methods using observation sheets and laboratory tests of Escherichia coli in snacks using the MPN method. The results showed that none of the respondents met the requirements of hygiene and sanitation of hawker food in accordance with Permenkes of the Republic of Indonesia No. 2 of 2023 concerning the implementation of Regulation No. 66 of 2014 concerning Environmental Health. Escherichia coli examination conducted on 12 samples, all positive for Escherichia coli with numbers 1.1 to greater than 23 fecal coli per 100 ml sample. Based on regulations, the acceptable limit of Escherichia coli bacteria is <3.6 MPN/gr of hawker food, there are 7 food samples that do not meet the requirements. It is recommended for hawker food traders to further improve the application of hygiene sanitation of hawker food in accordance with regulations and further improve clean and healthy lifestyles. For the relevant agencies of the Medan City Health Office to provide further supervision and counseling to hawker food sellers.
