| dc.description.abstract | This research aims to design and develop a control and monitoring system for the tempeh fermentation process based on the Internet of Things (IoT). The system utilizes a DS18B20 sensor to monitor temperature and an HDC1080 sensor to measure humidity, with ESP32 as the main controller. The measurement data are displayed through the blynk application on a smartphone, allowing the fermentation conditions to be monitored in real time. The device is also equipped with actuators such as an incandescent lamp as a heater, a DC fan for cooling, and a humidifier to maintain humidity, which are automatically controlled through a relay module. The test results show that the system is able to maintain the temperature within the range of 27℃–33°C and 34℃–40°C, as well as the humidity at 60%–75% according to the fermentation requirements of tempeh. The produced tempeh has a compact texture, evenly white color, distinctive aroma, and a neutral to savory taste, has similar characteristics to traditional fermented tempeh and market products. Therefore, this system can be considered an innovative solution for more controlled, efficient, and consistent tempeh production. | en_US |
