This study aims to analyze the optimal inventory control of organic rice in Lubuk Bayas Village, Perbaungan Subdistrict, Serdang Bedagai Regency using the Economic Order Quantity (EOQ) method with a make-to-order approach. This approach is applied because the production process is carried out based on customer orders; therefore, the ordering cost component is replaced by a setup cost, which refers to the expenses incurred each time the rice milling process is conducted, including labor wages, energy costs, and communication expenses. The research data include the demand for organic rice, setup costs, and storage costs over one year. The calculation results show that the optimal quantity of paddy to be milled per production cycle is 2,368.6 kg, with a re-milling point of 1,799.293 kg. The total optimal inventory cost is Rp 822,948.20, which is lower than the actual total cost of Rp 1,459,397.76, resulting in an efficiency of Rp 636,449.76. The EOQ method with a make-to-order approach helps farmer groups reduce storage costs and improve production efficiency according to consumer demand.
