dc.description.abstractThis study was aimed to determine the effect of storage temperature on the chemical characteristics of andaliman (Zanthoxylum acanthopodium DC) fruit extract and to estimate its shelf life using the Accelerated Shelf-Life Testing (ASLT) method with the Arrhenius and Q10 approaches. The experiment was conducted using two factors, namely storage temperature (37 °C, 45 °C, and 55 °C) and storage duration (0, 7, 14, 21, and 28 days). The parameters analyzed were total flavonoid content, total phenolic content, and antioxidant activity. The results showed that among the three parameters studied, total flavonoid content exhibited the lowest activation energy (Ea). Therefore, this quality parameter was used for shelf-life estimation based on the Arrhenius and Q10 models. The estimated shelf life of the andaliman fruit extract formula at storage temperatures of 37 °C, 45 °C, and 55 °C was 70,2463; 66,9642; and 63,1514 days, respectively.en_US
