    Analisis Arsen pada Makanan Pendamping Air Susu Ibu Berbasis Beras Secara Inductively Coupled Plasma-Mass Spectrometry

    Abstract
    Arsen merupakan salah satu logam yang ditemukan di alam yang bersifat toksik dan dapat menyebabkan kanker pada konsentrasi yang rendah. Beberapa penelitian telah menunjukkan tingginya kadar arsen pada makanan bayi yang terbuat dari beras dan hal ini sangat mengkhawatirkan karena bayi pada umumnya diberikan Makanan Pendamping Air Susu Ibu (MP-ASI) yang terbuat dari beras dan berat badan bayi yang masih kecil serta dalam masa pertumbuhan menyebabkan bayi merupakan kelompok yang paling rentan terhadap efek beracun dari arsen. Tujuan penelitian ini adalah untuk mengetahui kadar arsen pada MP-ASI bubuk instan, biskuit, siap masak dan siap santap berbasis beras dengan menggunakan metode Inductively Coupled Plasma-Mass Spectrometry (ICP-MS). Sampel MP-ASI berbasis beras yang berjumlah 21 sampel terdiri dari tujuh sampel MP-ASI bubuk instan, lima sampel MP-ASI biskuit, lima sampel MP-ASI siap masak dan empat sampel MP-ASI siap santap. Hasil penelitian menunjukkan bahwa kadar arsen pada MP-ASI bubuk instan 17,27 μg/kg sampai 106,15 μg/kg; MP-ASI biskuit 22,19 μg/kg sampai 194,13 μg/kg; MP-ASI siap masak 12,30 μg/kg sampai 67,93 μg/kg dan MP-ASI siap santap 1,99 μg/kg sampai 4,59 μg/kg. Berdasarkan persyaratan Badan POM (2017), kadar arsen pada MP-ASI maksimal 20 μg/kg, maka ada enam sampel MP-ASI bubuk instan, lima sampel MP-ASI biskuit dan tiga sampel MP-ASI siap masak yang kadar arsennya melebihi persyaratan Badan POM.
     
    Arsenic is one of the metals that can be found in nature which is toxic and carcinogenic, even at low level of concentration. There are many research that showed the high level of arsenic in rice-based baby foods and this is very worrying because most of the babies were given complementary foods along the breastfeeding which made of rice, with the small weight and in critical growth period has made the infant become the most vulnerable group to the toxic effects of arsenic. The objective of this research was to determined arsenic concentration in rice-based complementary foods consists of instant baby porridge, baby biscuit, ready to cook baby porridge and ready to eat baby porridge using Inductively Coupled Plasma-Mass Spectrometry (ICP-MS) method. Rice-based complementary foods samples in total of 21 samples consists of seven instant baby porridge samples, five baby biscuit samples, five ready to cook baby porridge samples and four ready to eat baby porridge. The results showed that concentration of arsenic in instant baby porridge was 17,27 μg/kg to 106,15 μg/kg; baby biscuit was 22,19 μg/kg to 194,13 μg/kg; ready to cook baby porridge was 12,30 μg/kg to 67,93 μg/kg and ready to eat baby porridge was 1,99μg/kg to 4,59 μg/kg. According to the National Agency of Drug and Food Control of Republic of Indonesia (NADFC) requirements (2017), the concentration of arsenic in complementary foods maximal of 20 μg/kg, then there are six samples of instant baby porridge, five samples of baby biscuit and three samples of ready to cook baby porridge that exceed the NADFC requirements.
