dc.description.abstract | Meat is kind of food as a source of essensial protein and other nutrients that are needed by humans. This study aims to determine the effect of physicochemical and organoleptic characteristics of Aceh beef and Brahman Cross on 40C storage time. This research used a completely randomized design, consisted of two factore : the type of beef (S): Aceh beef and brahman Cross beef and the storage time 4oC (A) consist of levels : 0, 1, 2, 3 weeks. The result showed that Brahman Cross beef had physicochemical and organoleptic characterization was better quality that Aceh beef meat. | en_US |
dc.description.abstract | Penelitian ini bertujuan untuk mengetahui pengaruh karakteristik fisik kimia dan organoleptik daging daging sapi aceh dan daging sapi brahman cross selama penyimpanan pada suhu 40C. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan 2 faktor yaitu jenis daging sapi (S) : daging sapi Aceh dan daging sapi Brahman Cross dan lama penyimpanan pada suhu 40C terdiri 4 level : 0, 1, 2, 3 minggu. Hasil penelitian menunjukan bahwa sapi Brahman Cross memiliki kualitas daging yang lebih baik secara fisik, kimia dan organoleptik dibandingkan dengan sapi Aceh. | en_US |
