Quorum sensing is a microbial communication system to synthesize virulence factors
such as pigment, biofilm, exopolysaccharide (EPS). This study aims to determine the
potential of andaliman (Zanthoxylum acanthopodium DC.) fruit extract antiquorum
sensing in food pathogenic bacteria. The potential of andaliman extract in terms of
its ability to inhibit the prodigiosin pigment in the Serratia marcescens bacteria as a
model bacterium, inhibits biofilm, and exopolysaccarhides in food pathogenic
bacteria. The highest inhibition of prodigiosin was found at a concentration of 0.05%
methanol fraction of 43.4% and at a concentration of 0.4% ethyl acetate fraction of
72.0%. Andaliman extract also has effectiveness in inhibiting biofilm formation. The
highest inhibition of E. cloacae biofilm was obtained from the concentration of 0.1%
extract of methanol and ethyl acetate, while the highest inhibition of biofilm A.
hydrophila was found at a concentration of 0.2% methanol fraction and 0.1% ethyl
acetate fraction. The highest inhibition of synthesis of E. cloacae exopolysaccarhides
was found in cultures with the addition of andaliman extract concentrations of 0.1%
methanol and ethyl acetate fractions, while inhibition of A. hydrophila
exopolysaccarhides was found at a concentration of 0.2% methanol fraction, and
0.1% ethyl acetate fraction. Quorum sensing merupakan suatu sistem komunikasi mikrob untuk mensintesis
faktor virulensi seperti pigmen, biofilm, eksopolisakarida (EPS). Penelitian ini
bertujuan mengetahui potensi ekstrak buah andaliman (Zanthoxylum acanthopodium
DC.) anti quorum sensing pada bakteri patogen pangan. Potensi ekstrak andaliman
ditinjau dari kemampuannya dalam menghambat pigmen prodigiosin pada bakteri
Serratia marcescens sebagai bakteri model, dan menghambat biofilm, serta
eksopolisakrida pada bakteri patogen pangan. Penghambatan prodigiosin tertinggi
terdapat pada konsentrasi 0,05% fraksi metanol sebesar 43,4% dan pada konsentrasi
0,4% fraksi etil asetat sebesar 72,0%. Ekstrak andaliman juga memiliki efektivitas
dalam menghambat pembentukan biofilm. Penghambatan biofilm E. cloacae
tertinggi didapat pada konsenstrasi ekstrak 0,1% fraksi metanol dan etil asetat,
sedangkan penghambatan biofilm A. hydrophila tertinggi terdapat pada konsentrasi
0,2% fraksi metanol dan 0,1% fraksi etil asetat. Penghambatan sintesis
eksopolisakarida E. cloacae tertinggi terdapat pada kultur dengan penambahan
ekstrak andaliman konsentrasi 0,1% fraksi metanol dan etil asetat, sedangkan
penghambatan eksopolisakarida A. hydrophila terdapat pada konsentrasi 0,2% fraksi
metanol, dan 0,1% fraksi etil asetat.
