dc.description.abstractBawang Batak (Allium chinense G. Don.) is one of native medicinal plants utilized as spices in North Sumatera, Indonesia. Batak onion tuber extract (Allium chinense) which has been known to have the ability as an antimicrobial was evaluated as a quorum sensing inhibitor (QSI) for food pathogenic bacteria Enterobacter cloacae and Aeromonas hydrophila. Batak onion bulbs extracted with methanol and ethyl acetate were tested first against the bacteria model Serratia marcescens which has prodigiosin pigment. The highest inhibition of prodigiosin production methanol fraction can be seen at 30 hours at a concentration of 0.3 of 29.8% while the ethyl acetate fraction can be seen at a concentration of 0.02% of 73.2%. The inhibition of E. cloacae biofilm formation was effective at 0.02% concentration of 56.3% methanol diffraction and 0.02% concentration of 61.5% ethyl acetate diffraction, while inhibition of A. hydrophila biofilm formation was effectively concentrated at 0.1% in fractions methanol was 60.1% and effective ethyl acetate fraction was 0.02% concentrated at 32.1%. The EPS synthesis by E. cloacae was inhibited at a concentration of 0.02% at 54.55% in the methanol fraction, while the ethyl acetate fraction inhibited at a concentration of 0.02% at 55.10%, while inhibiting the synthesis of EPS A. hydrophila was effective at concentration 0 , 2% of 70.37% of methanol diffraction and in effective ethyl acetate fraction was concentrated 0.3% at 80.77%. In inhibiting motility of E. cloacae and A. hydrophila methanol extract and ethyl acetate Batak onions were effective except at a concentration of 0.3%.en_US
dc.description.abstractBawang Batak (Allium chinense G. Don.) adalah salah satu tanaman yang digunakan sebagai rempah-rempah di Sumatera Utara, Indonesia. Ekstrak umbi bawang batak (Allium chinense) yang sudah diketahui memiliki kemampuan sebagai antimikroba dievaluasi kegunaannya sebagai quorum sensing inhibitor (QSI) terhadap bakteri pathogen pangan Enterobacter cloacae dan Aeromonas hydrophila. Umbi bawang batak yang diekstraksi dengan methanol dan etil asetat diujikan terlebih dahulu terhadap bakteri model Serratia marcescens yang memiliki pigmen prodigiosin. Penghambatan produksi prodigiosin tertinggi fraksi methanol dapat dilihat pada jam ke 30 pada konsentrasi 0,3 sebesar 29,8% sedangkan pada fraksi etil asetat dapat dilihat pada konsentrasi 0,02 % sebesar 73,2%. Penghambatan pembentukan biofilm E. cloacae efektif pada konsentrasi 0,02 % sebesar 56,3% difraksi methanol dan konsentrasi 0,02 % sebesar 61,5% difraksi etil asetat, sedangkan penghambatan pembentukan biofilm A. hydrophila efektif dikonsentrasi 0,1% pada fraksi methanol sebesar 60,1% dan pada fraksi etil asetat efektif dikonsentrasi 0,02% sebesar 32,1%. Sintesis EPS oleh E cloacae, dihambat pada konsentrasi 0,02% sebesar 54,55% pada fraksi metanol, sedangkan fraksi etil asetat menghambat pada konsentrasi 0,02% sebesar 55,10%, sedangkan penghambatan sintesis EPS A. hydrophila efektif pada konsentrasi 0,2% sebesar 70,37% difraksi metanol dan pada fraksi etil asetat efektif dikonsentrasi 0,3% sebesar 80,77%. Pada penghambatan motilitas E. cloacae dan A. hydrophila ekstrak methanol dan etil asetat bawang Batak efektif kecuali pada konsentrasi 0,3%.en_US
