    Karakterisasi Film Pelapis Khelat Kalsium Alginat – Kitosan dengan Bahan Pemlastis Gliserol

    Abstract
    The making of edible film of Calcium alginate – chitosan has been made by doing interaction between polyanionic alginate and polycationic chitosan with pH 5 – 6 which then dispersion in ion Ca2+. In looking for the influence of glycerol as plasticizer, therefore when making the edible film, it is done variously without glycerol and 3 – 5 mL of glycerol is given as plasticizer The characteristics of edible film without glycerol are : The result of using SEM shows the surface of edible film looks rough , Aw 0.263, water vapour permeability 556,476 g m-2, swelling test shows the addition of weight is higher balance with the addition of soaking time, tensile strength 1,34 Mpa, elongation 5.03, thickness of film 0.187 mm. The characteristics of edible film using 3 mL glycerol plasticizer are : The result of using SEM shows the surface of film looks smoother, Aw 0.290, water vapour permeability 498,018 g m-2, swelling test shows the addition of weight in the beginning of soaking, but more time the weight of edible film is lower, tensile strength 2.88 Mpa, elongation 3.51, thickness of film 0.133 mm. The characteristics of edible film using 5 mL glycerol plasticizer are : The result The result of using SEM shows the surface of film looks smoothest than others, Aw 0.390, water vapour permeability 480,004 g m-2, swelling test shows the addition of weight in the beginning of soaking, but more time the weight of edible film is the lowest, tensile strength 0.63 Mpa, elongation 5.03, thickness of film 0.213 mm.
     
    Telah dilakukan pembuatan edible film Kalsium Alginat – Kitosan dengan jalan melakukan interaksi antara polianionik Alginat dengan polikationik kitosan pada pH 5-6 yang kemudian didispersikan dalam ion Ca 2+. Untuk melihat pengaruh pemlastis gliserol maka pada saat pembuatan edinle film tersebut dilakukan variasi tanpa gliserol dan pemberian pemlastis gliserol sebanyak 3mL dan 5 mL . Karakteristik edible film tanpa pemlastis gliserol adalah sebagai berikut : Hasil SEM menunjukkan permukaan tampak kasar, Aw 0.263, permeabilitas terhadap uap air 556,476 g m-2, uji swelling menunjukkan pertambahan berat semakin besar berbanding lurus dengan pertambahan waktu perendaman, kuat tarik 1,34 Mpa, kemuluran 2,79, ketebalan film 0.187 mm. Karakteristik edible film dengan menggunakan pemlastis gliserol 3 mL adalah sebagai berikut : Hasil SEM menunjukkan permukaan lebih halus, Aw 0.290, permeabilitas uap air 498,018 g m-2, uji swelling menunjukkan pertambahan berat pada awal perendaman tetapi semakin lama berat film pelapis semakin rendah, kuat tarik 2.88 Mpa, kemuluran 3.51, ketebalan film 0.133 mm. Karakteristik edible film dengan menggunakan pemlastis gliserol 5 mL adalah sebagai berikut : Hasil SEM menunjukkan permukaan bertambah halus , Aw 0.390 , permeabilitas uap air 480,004 g m-2, uji swelling menunjukkan pertambahan berat pada awal perendaman tetapi semakin lama berat film pelapis semakin lebih rendah, kuat tarik 0.63 Mpa, kemuluran 5.03, ketebalan film 0.213 mm.
