Minyak sinamon telah diisolasi dari kulit tumbuhan Kayu manis (Cinnamomum burmanii) melalui proses destilasi uap. Kulit Kayu manis yang telah dihaluskan menjadi tepung sebanyak 20,50 kg didestilasi uap selama 12 jam ternyata dapat menghasilkan 19, 75 g ( 0,0963 %) minyak sinamon Kayu manis Analisis kandungan kimia minyak sinamon Kayu manis dengan GC-MS menunjukkan kadar sinamaldehida sebesar 82,83 %. Pemisahan sinamaldehida dari minyak sinamon Kayu manis menggunakan teknik kromatografi kolom padat – cair dengan fase diam silika gel G 60 F dan fase gerak n- heksan : etanol 95 : 5 (v/v) diperoleh sebanyak 64,04 % berat . Fraksi hasil isolasi di melalui analisis pemeriksaan spectrum FT-IR dan 1 H-NMR memberikan spektrum yang dapat menggambarkan karakterisasi struktur senyawa sinamaldehida Cinnamom oil has been isolated from Cinnamomum burmanii Ness by steam distillation processing. C. burmanii’s Nees was grinded in to flour and weighed of 20.50 kilograms and then was prosessed by steam distillation for 12 hours in which 19,75 grams of cinnamon oil was resulted (0,0963 %). The chemical species content in Cinnamon oil was determined by GS-MS and it was found that Cynamaldehyde content was 82,83 % (w/w). The separation of cynamaldehyde from cinnamon oil was carried out by coulomb chromatographic method using silica gel G60F as a stationary phase and n- hexane : ethanol ( 95 : 5 ) v/v as a mobil phase. It was found that cynamadehyde content was of 64.04 % ( w/w ) . Analysis by using FT-IR and 1H-NMR technique showed that fraction obtained by coulomb chromatographic method was cynamadehyde ( 3 – phenyl – 2 – prophenal ).
