Metal ion analysis has been performed (Fe3+), Zinkum (Zn2+) and calcium (Ca2+) on the green spinach (Amaranthus tricolor), red spinach (Blitum rubrum) and the boiling water with the influence time of the Atomic Absorption Spectrophotometric method. Initial preparation of samples are washed, cleaned and dried. Process is then performed by inserting the sample in to furnace at a temperature of 500oC. Samples that have been reduced to ashes preserved to obtain the sample solution in accordance with SNI preservation of samples of each metal. Parameter analysis of the AAS include the optimum conditions, calibration curve element, and a range of concentrations used. The results showed the Green spinach (Amaranthus tricolor) obtained the metal concentrations of Iron (Fe) of 2,3240 mg/kg, Zinkum metal (Zn) of 5,2846 mg/kg, and the metal calcium (Ca) of 127,866 mg/kg. For beginning of the cooking water metal concentrations of Iron (Fe) of 0,0943 mg/kg, Zinkum metal (Zn) of 0,0219 mg/kg, metal calcium (Ca) of 0,0675 mg/kg. After a reheated concentration of the metal iron (Fe) of 0,1898 mg/L, Zinkum metal (Zn) of 0,0758 mg/kg, metal calcium (Ca) of 0,1437 mg/kg. While the red spinach (Blitum rubrum) concentrations obtained metal concentration Iron (Fe) of 2,6926 mg/kg, Zinkum metal (Zn) of 10,4150 mg/kg, and the metal calcium (Ca) of 200,616 mg/kg. For beginning of the cooking water metal concentrations of Iron (Fe) of 0,1164 mg/kg, Zinkum metal (Zn) of 0,1030 mg/kg, metal calcium (Ca) of 0,1423 mg/kg. After a reheated concentration of the metal iron (Fe) of 0,1523 mg/kg, Zinkum metal (Zn) of 0,2106 mg/kg, metal calcium (Ca) of 0,4397 mg/kg. From the results obtained so spinach is good for human consumption by adults in compliance with the Department of Health in 1990.
