| dc.description.abstract | Overcoming malnutrition in children under five can be done by providing additional food that comes from local food that has economic value. This study aimed to analyze the effect of giving biscuits substituted with mocaf flour, red beans, and herbal chicken gizzards on the weight gain of undernourished children under five in the Medan Tuntungan Health Center Work Area. This experimental research was conducted in three stages. First, making cookies using a completely randomized design (CRD) using 3 factors and 3 treatments (C1, C2 and C3). Second, acceptability test to find out the most preferred cookie, and analyze its nutritional content. Third, the 50 g cookie intervention for 30 days, to determine its effect on the body weight of undernourished toddlers, was carried out using the Prettest-Posttest Control Group Design. The results of the organoleptic test assessment based on the parameters of aroma, color, taste, texture and shape, the highest score was obtained on C1 cookies. Based on the results of the Krusskal Wallis test, it showed that there was a difference in acceptability between the three cookies C1, C2 and C3 (ρ<0,05), then based on the Mann Whitney test, it was shown that, the C1 cookie was proven to be the most preferred (ρ<0,05. These cookies contain 7.25% protein, 455.45 mg calcium, 4.11 mg Fe, 671.61 mcg/100 gram of vitamin A cookies. Based on the results of the Independent T-test showed that there was a difference in the weight gain of malnourished children under five in the treatment group and the control group (ρ<0.05) with the average increase in the treatment group being higher than the control group, with an average increase in ratio the weight of the treatment group was 5.41, while in the control group it was 1.27. In conclusion, giving mocaf flour substitute cookies, red beans, and herbal chicken gizzards can increase the weight of undernourished children under five. Suggestion, it is hoped that this cookie can be an alternative to overcome malnutrition in children under five. | en_US |
| dc.description.abstract | Penanggulangan gizi kurang pada balita dapat dilakukan dengan Pemberian Makanan Tambahan yang berasal dari pangan lokal yang bernilai ekonomis. Penelitian ini bertujuan untuk menganalisis pengaruh pemberian kukis subsitusi tepung mocaf, kacang merah, dan ampela ayam herbal terhadap kenaikan berat badan balita gizi kurang di Wilayah Kerja Puskesmas Medan Tuntungan. Penelitian eksperimen ini dilakukan melalui tiga tahap. Pertama, pembuatan kukis mennggunakan desain Rancangan Acak Lengkap (RAL) menggunakan 3 faktor dan 3 perlakuan (C1, C2 dan C3). Kedua, uji daya terima untuk mengetahui kukis yang paling disukai, dan analisis kandungan zat gizinya. Ketiga, intervensi kukis sebanyak 50 g selama 30 hari, untuk mentahui pengaruhnya terhadap berat badan balita gizi kurang, dilakukan menggunakan Prettest-Posttest Control Group Design. Hasil penilaian uji organoleptik berdasarkan parameter aroma, warna, rasa, tekstur dan bentuk, skor tertinggi diperoleh pada kukis C1. Berdasarkan Hasil uji Krusskal Wallis menunjukkan bahwa, terdapat berbedaan daya terima diantara ketiga kukis C1,C2 dan C3 (ρ<0,05), selanjutnya berdasarkan uji Mann Whitney menujukkan bahwa, kukis C1 terbukti yang paling disukai (ρ<0,05). Kukis ini mengandung protein sebesar 7,25%, kalsium 455,45 mg, Fe 4,11 mg, vitamin A 671,61 mcg/100 gram kukis. Berdasarkan hasil uji T-Independen menunjukkan ada perbedaan kenaikan berat badan anak balita gizi kurang pada kelompok perlakuan dan kelompok kontrol (ρ<0,05) dengan rata-rata kenaikan pada kelompok perlakuan leboh tinggi dibandingkan dengan kelompok kontrol, dengan rata-rata ratio kenaikan berat badan kelompok perlakuan 5,41, sedangkan pada kelompok kontrol sebesar 1,27. Kesimpulan, pemberian kukis subsitusi tepung mocaf, kacang merah, dan ampela ayam herbal dapat meningkatkan berat baan balita gizi kurang. Saran, diharapkan kukis ini dapat menjadi satu alternatif penagnggulangan gizi kurang pada anak balita. | en_US |
