Penentuan Kadar Air, Asam Lemak Bebas dan Deterioritation Of Bleachability Index Pada Crude Palm Oil di Pusat Penelitian Kelapa Sawit

Abstract

Determination of Moisture Content, Free Fatty Acid (FFA) and Deterioritation Of Bleachability Index (DOBI) in palm oil has been carried out at the Palm Oil Research Center (PORC). The samples used were obtained from PORC plantations. Determination of water content was determined by the oven method, FFA levels were determined by the Acid-Base Titration method and the determination of DOBI was determined using the Spectrophotometric method using an isooctant solvent. From the research conducted, the average value of water content is 0.46%, the average value of free fatty acids is 4.34% and the DOBI value is 1.17. Based on the standards set by the National Standards Agency (NSA) through SNI-01-2901-2006, that the water content value is less than 0.5%, the FFA content is less than 5% and the DOBI value is in the range of 2.30-2 ,92. Based on the results obtained, it shows that the value of the water content and the value of the FFA content have met the quality standard, while the DOBI level does not meet the quality standard of SNI-01-2901-2006.

Telah dilakukan Penentuan Kadar Air, Kadar Asam Lemak Bebas (ALB) dan Deterioritation Of Bleachability Index (DOBI) pada minyak kelapa sawit di Pusat Penelitian Kelapa Sawit (PPKS). Sampel yang digunakan diperoleh dari kebun PPKS. Penentuan kadar air ditentukan dengan metode oven, kadar ALB dengan metode Titrasi Asam Basa dan penentuan DOBI dengan metode Spektrofotometri menggunakan pelarut isooktan. Dari penelitian yang dilakukan diperoleh nilai kadar air rata-rata sebesar 0,46%, nilai rata-rata asam lemak bebas sebesar 4,34% dan nilai DOBI sebesar 1,17. Berdasarkan standar yang ditetapkan oleh Badan Standar Nasional (BSN) melalui SNI-01-2901-2006, bahwa nilai kadar air lebih kecil dari 0,5%, kadar ALB lebih kecil dari 5% dan nilai DOBI berada pada kisaran 2,30-2,92. Berdasarkan hasil yang diperoleh, menunjukkan bahwa nilai kadar air dan nilai kadar ALB sudah memenuhi standar mutu, sedangkan kadar DOBI tidak memenuhi standar mutu SNI-01-2901-2006.
