Yellowstripe scad (Selaroides leptolepis) is a small pelagic fish that is in great demand by the public because of its tasty meat and high protein content, which is around 18-19%. So far, studies examining the use of yellowstripe scad as a raw material for making shredded fish with the addition of kepok banana blossom has not been reported. This study aims to determine consumer acceptance and quality characteristics of shredded yellowstripe scad (Selaroides leptolepis) with addition of 30% kepok banana blossom through hedonic test, proximate test and bacterial test for Salmonella and Coliform. The results showed that the shredded yellowstripe scad could be accepted by consumers. Values of water, ash, protein, fat and crude fiber of shredded was 14.28%, 8.05%, 44.04%, 26.47% and 30.09%. The results of microbiological test showed that shredded yellowstriped scad had negative values for Coliform (<3 APM/g) and Salmonella (negative/25g).
