dc.description.abstract | Research on water-soluble chitosan was produced from commercial chitosan depolymerization and then used as an antibacterial agent in healthy drinks. It consisted of two stages. The first stage of modification of commercial chitosan into water-soluble chitosan was carried out by degrading chitosan with 1% H2O2 to produce water-soluble chitosan, which was analyzed by FT-IR and Antibacterial. The next stage is making healthy drinks using vitamin C and then adding water soluble chitosan to healthy drinks with a variation of 0.5% chitosan concentration; 1%; 1.5%; 2%; and 2.5% with temperature variations of 37oC and 7oC. Then collagen, ascorbic acid, carboxymethyl cellulose, and methyl anthranilate were added to healthy drinks, after which they were stirred for 90 minutes at 37oC. The method used is an experimental method with test parameters of viscosity, antibacterial, ALT, pH, and organoleptic. Water soluble chitosan increased the degree of deacetylation from 80.29% to 90.62%. The Vitamin C healthy drink formulation has the ability to inhibit the growth of microbes and Escherichia coli bacteria. This is indicated by the positive results in the antibacterial test where there is an inhibition zone diameter of 3.0 mm at a water-soluble chitosan concentration of 2.5%. The best results were obtained with the addition of water-soluble chitosan with a concentration of 2.5% at a temperature of 7oC for 90 days with the results of a viscosity test of 135,744 cP, a molecular weight of 16,440 x 106 g/mol, ALT 14 x 101 cfu/ml and an acidity degree of pH 4.27. The results of the organoleptic test stated that the panelists preferred healthy vitamin C drinks with the addition of 2.5% chitosan for aroma, color, and taste with a rating of liking. The results of the analysis of healthy vitamin C drinks with the addition of water-soluble chitosan still meet the existing SNI standards. | en_US |
