| dc.description.abstract | The aim of this research was to investigate the effect of Na,S,O, and drying
temperature on the quality of avocado seed starch that produced. The research had been
performed using factorial completely randomized design (CDR) with two factors, ie:
natrium metabisulfite concentrates (Ki 0 ppm, K2 750 ppm, K 1500 ppm,
K₁ = 2250 ppm. K, 3000 ppm) and drying temperature (S= 50°C, S₂ = 60°C.
S=70°C), Parameters analyzed were yield, water content, ash content, sulfite residue,
and organoleptic color
Natrium metabisulfite concentrates had highly significant effect on yield, ash
content, sulfite residue and organoleptic color, and had no significant effect on water
content Drying temperature had highly significant effect on yield, water content, ash
content, sulfite residue, organoleptic color. The interaction of natrium metabisulfite and
drying temperature had highly significant effect on yield, ash content, and sulfite residue,
and had no significant effect on water content and organoleptic color. The 3000 ppm
natrium metabisulfite and the 50°C drying temperature produced the best quality of the
