dc.description.abstractDodol is a traditional food which is popular enough in some Indonesia area. Skill is needed in producing good quality dodol. Four hours are needed in making dodol. Therefore a churn appliance is helpful to easier preparing of dodol. The aim of this researcah is to test the rpm of churn appliance on the quality of dodol yielded by using completely non factorial random design with of parameters efficiency of preperation, effective capacity of appliance, percentage dodol which charred and broken, yield and economic analysis. Results of this research indicated that pulley diameter gave significant effect on capacity of appliance and its efficiency gave higher significant effec oncharred dodolt. Maximum production cost of every kg dodol was obtained at 44 rpm and minimum at 34 rpmen_US
