Cinnamon bark essential oil has several benefits that can be applied to food, cosmetics, pharmaceutical, agriculture and other sectors. The components of cinnamaldehyde contained in cinnamon bark essential oil can be extracted by several methods. Many studies had been conducted to extract essential oil such as maceration, Soxhlet extraction, supercritical fluid extraction, and so on. Microwave-assisted extraction is utilized in the extraction process to increase yield, minimize solvent, time, and energy and also minimize the environmental impact. The study also reviewed the influence of the power used to produce electromagnetic waves and also sample ratio to solvent in the extraction process. The study was conducted using solvents of water, ethanol, and water: n-hexane (1:1) with sample and solvent ratios of 1:6, 1:9, and 1:12 and power variations of 300, 450, and 600 watts. The study operated on the ratio of sample and solvent concentrations is 1:6 with a power level used at 450 watt for 30 minutes. Temperature gradients that occur throughout the operation time can speed up the extraction process resulting in optimum cinnamon bark essential oil yields. In the 30th minute, the temperature recorded reached 102°C. The results of research conducted by ethanol solvents show the most optimal yield of 7% essential oil. Based on the mathematical modeling that has been carried out, the second-order kinetic model is stated to be able to represent the results of the experiment well. The best yield obtained at 30 minutes requires 0,225 kWh of electrical energy and costs IDR0,325 in the process. Carbon dioxide emissions released into the atmosphere by 0,18 gramsen_US
