dc.description.abstract | The aim of this researched to know the effect of the influence of long chilled
inflorescences and long storage of liquid palm sugar. The research had been performed using
factorial Completely Randomized Resign (CRD) with two factors, i.e; the long chilled
inflorescences (P) : (0 day, 1 day and 2 day) and long storage (L) : (0 day, 15 day, 30 day, 45 day
and 60 day). Parameters analyzed were moisture content, ash content, viskocity, pH, TSS and
organoleptic values (colour, aromatic and taste,). The result of this researched showed that the
long chilled inflorescences had highly significant effect of the moisture content, ph, viskocity, TSS
and organoleptic value (colour, aromatic and taste), but had not significant effect of the ash
content. The long storage had highly significant effect of moisture content, pH, Viskocity, TSS and
organoleptic value (Colour, aromatic and taste), but had not significant effect of ash content. The
interaction of the long chilled inflorescences and long storage had highly significant effect of
moisture content and viskocity and had significant effect of pH, but had not significant effect of
ash content. The long chilled 0 day and long storage 0 day were the best result of liquid palm
