A research about analysis of composition of fatty acid and cholesterol content
in kampung chicken (Gallus domesticus) and broiler chicken meat has been done.
Kampung and broiler chicken's meat extract obtained by soxhlet with chloroform and
converted to fatty acid methyl ester with methanolysis and analyzed with GC-MS
method. Kampung and broiler chicken's meat dissolved with chloroform and
centrifuged with speed of rotation 3000 rpm during 20 minutes then saponified with
KOH-alcohol and analyzed of cholesterol content with HPLC method. The result of
research show that composition of fatty acid from kampung chicken meat are
myristate acid (1,23 %), palmitoleic acid (9,08 %), palmitate aicd (27,11 %), oleic
acid (47,56 %), stearic acid (7,19 %) and broiler chicken meat are myristate acid
(1,40 %), palmitoleic acid (7, 77 %), palmitate acid (27,20 %), oleic acid (48,29 %),
stearic acid (8, 69 %), and cholesterol content from kampung chicken and broiler
chicken's meat are 0, 7073 gll00g and 0, 7661 g/J00g.
