dc.description.abstract | FATIMAH SINAGA: The Effect of Drying and Freezing Temperature on The Quality of Mechanically Smashed Candlenut, supervised by AINUN ROHANAH and SAIPUL BAHRI DAULAY. Candlenut is tend to be smashed traditionally. The quality of candlenut is affected by drying and freezing. This research was performed in June 2010 at Workshop of Agricultural Machinery and Equipment Agricultural Approperate Technology and Agricultural Engineering Laboratory, College of Agriculture, USU, Medan using factorial completely randomized design with two factors i.e drying temperature (50, 60 and 70ºC) and freezing temperature (-10, -15, and -20ºC). Parameters measured were intact kernel percentage, two pieces kernel percentage, crushed kernel percentage, stick kernel percentage and kernel’s moisture content. The results showed that drying temperature had significantly affected all parameters. Freezing temperature significantly affected all parameters except kernel’s moisture content. The intraction of the two factors only had significantly affected the intact kernel percentage and crushed kernel percentage. The best result was the combination of 60ºC drying temperature and -20ºC freezing temperature. | en_US |
