HENRI SAPUTRA HARAHAP : The Engineering of pyrolysis equipment for making liquid smoke by utilizing waste of coconut shell, supervised by AINUN ROHANAH and TAUFIK RIZALDI. One way to make liquid smoke is by condensing of smoke resulted from incomplete combustion of coconut shell. Smoke has the ability to preserve food stuff because of the existence of acid compound, phenol and carbonyl. One of the materials used to produce liquid smoke is coconut shell which is waste from coconut fruit so it can be used again to increase economic value. The aim of this research was to engineer, make, and test the pyrolysis liquid smoke equipment from January 2011 until April 2011 at the Laboratory of Agricultural Engineering, Faculty of Agriculture, University of North Sumatra, Medan, using of literature study, experiment, and also observation and testing of the equipment. Parameters observed were effective capacity of the equipment, yield, and economic analysis. Based on the research, the effective capacity of the equipment was 2.44L/h with a yield of 41.073%.. While the basic costs to be incurred to make 1 liter of liquid smoke is as much as Rp. 4.034.669.
