dc.description.abstractOil palm fruit is processed in a factory to produce the extract, in the form of crude palm oil or CPO (Crude Palm Oil) and palm kernel oil PKO (Palm Kernel Oil). Determination of water content and levels of free fatty acids from palm kernel oil for ten days. From the analysis of data obtained from palm kernel moisture content in the first week ranged from 6.11% - 6.46%, and in the second week ranged from 6.19% - 6.32%, and also obtained levels of free fatty acids from the core palm in the first week ranged from 0.49% - 0.54%, and in the second week ranged from 0.41% - 0.54%. From the analysis results showed that water content and levels of free fatty acids from palm kernel still fulfill SNI 01-0002-1987.en_US
