dc.description.abstractAsam gelugur is a commodity with a promising economic potential which grows only in some peninsula areas. North sumatera is one of the areas where this fruit grows. The drying process employed by farmers of asam gelugur method direct drying under the sun a tarpaulin. This method has many shortcomings such as long drying time, unhygienic, blocked by rain, polluted by dust and sand, insect infecsitation, and so forth. The use of a tray dryer dryer is expected to overcome all the deficiencies of using direct dryers. In this study the experiment was conducted by variety air flow at 1.0 m/s and air flow and 1.6 m/s of and the use of influence of desiccant. The results indicated that drying periods of up and down indicate good things as expected. The contant drying period is almost invisible, the cause is probably due to the high temperature which lead direct on the drying characteristic curve.en_US
