Although enzymatic process has several advantages compared to chemical processes but application enzymatic process at industrial scale burneded by price of microbial lipase which costly relative. Therefore, cheaper source lipase development and own the high availability require to be done. One of them is from plant substance. Germinating seeds know to own the activity lipase which high enough. The objective of this research is to know the role of enzyme lipase from extract of germinating of palm seeds at glycerolysis process of stearin and coconut oil.
This study showed that the lipase had lower specificity at diglyceride molecule (DG) than triglyceride molecule (TG), so the hydrolysis of DG molecule become MG relative difficult to happen. The DG content in product stearin and coconut oil of result of the glycerolysis product was range 30-40%, whereas the MG content was relatively low, namely about 4-9%. | en_US |
