Gaharu is a forest product plant in Indonesia which has potential as medicine. Gaharu also contains flavonoid compounds which are antioxidants which enable it to be used as a basic ingredient for making tea. The purpose of this study was to identify the compounds contained in gaharu twigs, analyze the antioxidant activity in gaharu twig tea, find out the proximate value of gaharu twigs and analyze information about people's preference for gaharu twig tea. Testing of chemical compounds on gaharu branches was carried out using the phytochemical screening method, antioxidant testing using the DPPH method, proximate tests including (testing moisture content, ash content, fat content, protein content) and hedonic tests. The results of the phytochemical screening test of gaharu twigs were positive for containing alkaloid compounds of saponins, tannins, flavonoids and steroids/triterpenoids. Antioxidant test results from A. malaccensis Lamk. classified as weak with an IC50 valueof 166.44 μg/ml and the type W. tenuiramis Miq. classified as strong with an IC50 twigs A. malaccensis Lamk obtained a moisture content of 7.6% ash content of 2.4% protein content of 4.81% and 0.69% fat and W. tenuiramis Miq. obtained 8.9% moisture content 5.8% ash content 6.27% protein content and 1.22% fat content. The hedonic test results of A. malaccensis Lamk. and W. tenuiramis Miq. from the aroma and color parameters, neutral results were obtained, then in terms of the taste parameters, the results obtained were like.
