Alternative utilization of coconut milk can be used in food products, one of which is in the manufacture of cheese. Coconut milk does not contain lactose like Cow's milk, so it can be consumed by lactose intolerant sufferers. In addition, the fat content of coconut milk is a vegetable fat that does not contain cholesterol as found in animal fat in Cow's milk. An alternative that can be used is to replace Cow's milk with coconut milk. The hard cheese factory from coconut milk is planned to produce with a production capacity of 6,500 tons/year and operate for 300 days a year. The factory location is planned in Pulau Tagor Village, Galang District, Deli Serdang Regency. The land area required for the establishment of the factory is 12,029 m2. The required workforce is 125 peoples with the form of a Limited Liability Company (PT) business entity with a line and staff organizational system.
The results of the analysis of the economic aspects obtained are as follows:
• Total Investment Capital = IDR 645,341,576,308
• Total Production Cost = IDR 609,610,524,004
• Sales Results = IDR 877,500,216,000
• Net Profit = IDR 145,118,890,987
• Profit Margin = 30.07%
• Break Even Point = 15.91%
• Return on Investment = 28.63%
• Pay Out Time = 3.49 years
• Return on Network = 47.72%
• Internal Rate of Return = 35.16%
Based on the results of the analysis of the economic aspect, it can be concluded that this "hard cheese factory from coconut milk" with a production capacity of 6,5000 tons/year" is feasible to establish.
