    Analisis Kandungan Nitrat (NO3-) dalam Sayuran Kol / Kubis Putih (Brassica Oleracea L.) Konvensional yang dipasarkan di Kota Medan dengan Metode Spektrofotometri Ultraviolet

    Abstract
    The nitrate (NO3-) content in the conventional white cabbage has been analysed. Conventional white cabbage samples were taken by three traditional markets in Medan and three swalayan markets in Medan. Samples was extracted using aquadest free nitrate and heated for 25 minut C. The determination of nitrate content in conventional white cabbage using spectrophotometric uv-visible at two wavelenght eliminated λ = 220 nm and λ = 275 nm and HCl 1N added prior analysed so be obtained nitrate content in conventional white cabbage from 3 different traditional matkets are 1494,2555 ± 0,00000 miligram per kilogram, 1885,6921 ± 0,02193 miligram per kilogram, 1312,00393 ± 0,03350 miligram per kilogram and from 3 different swalayan markets are 1364,0313 ± 0,06700 miligram per kilogram, 2244,9201 ± 0,04386 miligram per kilogram, and 1797,4317 ± 0,01266 miligram per kilogram. Consuming recommedation of white cabbage concerning to the analysis results of nitrate content according to ADI (Average Daily Intake) 3,7 miligram per kilogram of weight per each day.
     
    Penelitian mengenai penentuan kandungan Nitrat (NO3-) telah dilakukan pada kol/kubis putih konvensional. Sampel kol/kubis putih konvensional diambil dari tiga pasar tradisional dan tiga pasar swalayan yang berbeda yang berada di kota Medan. Preparasi sampel dilakukan C selama 25 menit. Penentuan kandungan nitrat dilakukan dengan metode Spektrofotometri UV-Visible dengan pengurangan dari dua panjang gelombang λ = 220 nm dan λ = 275 nm dengan penambahan HCl 1N. Hasil Penelitian menunjukkan kandungan nitrat dalam kol/kubis putih konvensional dari tiga pasar tradisional yang berbeda di kota Medan masing-masing 1494,2555 ± 0,00000 mg/Kg, 1885,6921 ± 0,02193 mg/Kg, 1312,00393 ± 0,03350 mg/Kg, dan kol/kubis putih dari tiga pasar swalayan yang berbeda di kota Medan masing-masing 1364,0313 ± 0,06700 mg/Kg, 2244,9201 ± 0,04386 mg/Kg, dan 1797,4317 ± 0,01266 mg/Kg. Sehingga dapat disimpulkan bahwa kandungan nitrat didalam kol/kubis putih konvensional memiliki kandungan yang tinggi sehingga perlu lebih diperhatikan massa kol/kubis yang dikonsumsi agar sesuai dengan peraturan ADI (Average Daily Intake) sebesar 3,7 mg/Kg berat tubuh perhari.
