Mangrove api-api fruit extract (A. marina) contains bioactive ingredients in the form of alkaloids, terpenoids, saponins, flavonoids and tannins which can be used as preservatives to inhibit the degradation of fish freshness. The use of fish with different habitats, seawater fish (flyfish), brackish water fish (milkfish) and fresh water fish (carp) aims to be a comparison of the effectiveness of mangrove fruit extracts. The research method used was an experimental trial using a completely randomized design (CRD) with no immersion (M0) and immersion (M1) treatment. In 3 types of fish (I) milkfish (B), flying fish (L) and goldfish (M) with 2 replications. Based on the research, it was found that the administration of api-api mangrove fruit extract (A. marina) to fish species from different habitats had an effect on the physical quality of the fish including very significantly different eyes (P > 0.01), significantly different gills (P > 0.05), mucus surface, meat, odor and texture was not significant (P < 0.05) with the value of fish given mangrove api-api fruit extract (A. marina ) was higher than without the administration of api-api mangrove fruit extract (A. marina), and there was a very significant effect on seawater fish, namely flyfish which had a very significant effect (P > 0.01) on the value of TVB-N and fat test. However, the pH and TPC (Total Plate Count) tests had no significant effect (P <0.05).
