Sweet potato has good prospects as a leading agricultural commodity. North Sumatra sweet potato is exported in fresh form and the rest is to meet domestic needs. This study aims to analyze the factors that influence the demand for sweet potatoes in North Sumatra, determine the demand function for sweet potatoes and determine the elasticity of demand for sweet potatoes in North Sumatra. The data used is data sourced from the Central Statistics Agency (BPS) of North Sumatra in 2001-2021, the method used is the Almost Ideal Demand System (AIDS) analysis. The results of the analysis show that the factors that influence the demand for sweet potatoes in North Sumatra significantly are the price of sweet potatoes from the demand equation for corn, rice, cassava and sweet potato. While corn prices, rice prices, cassava prices and total expenditure value both from the demand equation for corn commodities, rice commodities, cassava commodities, and sweet potatoes commodities have no significant effect. The sweet potato demand system model explained by the AIDS model is consistent with demand theory, testing the parameters of the three restrictions namely adding up, homogeneity, and slutsky symmetry succeeded in fulfilling the demand theory model. The price elasticity value itself shows that the elasticity value of sweet potato is elastic, while the elasticity value of cassava is inelastic. The value of cross-price elasticity is known that in general all commodities have varying elasticity, some are positive and some are negative. The value of the elasticity of expenditure shows that the commodity of corn is included in the inferior goods, the commodity of rice is included in the normal goods while the commodities of cassava and sweet potato are included in the superior/luxury goods.en_US
