Analysis of carbohydrate content and ash content in samples of durian seed crackers at the Medan Industry Standardization and Service Center, North Sumatra. This study aims to determine the levels of carbohydrates and ash content contained in food durian seed crackers which are then compared with food and beverage quality standards according to SNI No 01-2891-1992. The method used to determine the carbohydrate content is the Luff Schoorl method with a yield of 64.0% and the results are in accordance with the recommended standard of 60-75% and the method used to determine the ash content is the dry destruction method (ashing). , a yield of 2.26% was obtained and the results obtained were according to the standard recommended amount, namely 1.5-20%. The analysis results obtained show that the carbohydrate content and ash content of durian seed crackers are in accordance with the Indonesian National Standard No. 01-2891-1992 concerning Appropriate Quality of Food and Beverages.
