Analysis of the levels of organophosphate pesticide residues with the active ingredient chlorpyrifos in Arabica coffee (Coffea arabica) was carried out using gas chromatography equipped with a flame ionization detector (FID) with an Hp- 5 column type. Chlorpyrifos is a compound having the IUPAC name O,O-diethyl O-3,5,6-trichloro-2-pyridyl phosphorothioate which is produced by the stepwise synthesis of 3-methyl pyridine, finally reacting with 3,5,6-trichloro-2-pyridinol with diethylthiophosphoryl chloride. From the results of the analysis carried out, it was found that the levels of organophosphate pesticide residues on Arabica coffee plants with the active ingredient chlorpyrifos were detected for Arabica coffee samples A (1A detected 0.12584 mg/kg, and 2A detected 0.13636 mg/kg), and for Arabica coffee samples B (1B detected 0.3511 mg/kg and 2B detected 0.12676 mg/kg). This shows that the residue levels in Arabica coffee have exceeded the maximum residue limit (BMR) of pesticides in accordance with the provisions of SNI 7313: 2008 for the coffee commodity, namely 0.05 mg/kg, making it unfit for consumption.
