Pra-Rancangan Pabrik Pembuatan Dekstrin dari Umbi Talas Menggunakan Proses Hidrolisis Enzimatis dengan Kapasitas Produksi 12.000 Ton/Tahun dan Tugas Khusus Rancangan Keteknikan Reaktor
Abstract
The designed of dextrin from taro tubers manufacture plant by enzymatic hydrolysis method, has a production capacity of 12,000 tons/year and operates for 330 days a year. The main process in this plant designed consists of two stages, namelygelatination and liquefaction. At the liguification stage, a reaction occurs in the form of hydrolysis of starch into dextrins with the catalyst α-amylase which takes place in the reactor at an average temperature of 95°C for 3 hours.
The production process of dextrin from taro tubers using enzymatic hydrolysis of starch is carried out in several stages of the process, namely:
1. Raw Material Preparation
2. Material Mixing Stage
3. Gelatinization Stage
4. Liquification Stage
5. Purification and Drying Stage
The specific task that was completed was the engineering design of the reactor, where the liquefaction stage took place. The designed reactor has the following specifications:
1. Reactor Volume : 13.3143 m3
2. Reactor diameter : 2.48m
3. Reactor height : 3.31m
4. Reactor thickness : 1/4 in
5. Mixer type : six pitch blade turbine
6. Diameter of the impeller : 0.827m
7. Stirrer power : 1 hP
8. Cooling jacket spacing : 10 in
9. Speed of cooling water : 1.743 m/hour
The planned factory location is in the Kuala Tanjung Industrial Estate (KTIE) area, which is located in Sei Suka District, Batu Bara Regency, North Sumatra. The land area required to set up the factory is 7,547 m2. The workforce needed is 110 people with the form of business is Perseroan Terbatas (PT) under the leadership of a General Manager.
The results of the economic evaluation of the Dextrin Manufacturing Plant from taro tubers are as

Sales proceeds : Rp. 383,999,996,160.00
Net profit : Rp. 69,144,868,368.42
Profit Margin (PM) : 18 %
Beak Even Point (BEP) : 31.53%
Return On Investment : 18.41%
Pay Out Time : 5.4 years
Return on Network : 30.68 %
Internal Rate of Return : 23.10%
From the results of the analysis of the economic aspects, it can be concluded that the factory for the manufacture of dextrin from taro tubers is feasible to establish.
