Glucose syrup is a liquid sugar derived from monosaccharide groups obtained from starch through acid hydrolysis, enzymatic hydrolysis, or a combination of both. Glucose syrup is widely used in the food industry as a raw material in the production of confectionery, beverages, and jam. Raw materials that can be used in the production of glucose syrup are substances with high starch or cellulose content. One underutilized byproduct of banana plantations is banana weevil. Banana weevil is a part of the stem that contains a significant amount of food reserves, mainly starch, with an average starch content of 76%. The starch content in banana weevil can be used as a raw material in the production of glucose syrup. Additionally, the rapid growth and development of banana plants make the availability of banana weevil abundant. The preliminary design of a glucose syrup production plant using banana weevil as the raw material is designed with a production capacity of 5,000 tons per year and operates in batches for 330 days per year. The objective of this preliminary design is to serve as a reference for establishing a glucose syrup production plant in Indonesia to meet the domestic demand for glucose syrup, which is still dependent on imports from other countries. It also aims to optimize the availability of banana weevil as an abundant horticultural waste in Indonesia and to determine the feasibility of the preliminary design process from an economic perspective. The glucose syrup production plant from banana weevil will be established in Jalan Raya Pamotan, Pamotan Village, Dampit District, Malang City, East Java Province, with a land area of 13,871 m2. The plant will adopt a line and staff organizational structure and operate as a Limited Liability Company (PT). The number of employees required to operate the plant is 104. The results of the economic analysis for the preliminary design of the glucose syrup production plant from banana weevil are as follows: • Total Investment Capital : Rp 210.611.016.713,96 • Total Production Costs (per year) : Rp 119.725.725.989,11 • Sales Revenue (per year) : Rp 183.059.966.043,50 • Net Profit (per year) : Rp 41.045.419.755,18 • Profit Margin (PM) : 22,42% • Break-Even Point (BEP) : 44,56% • Return on Investment (ROI) : 19,49% • Pay Out Time (POT) : 5,13 years • Return on Network (RON) : 32,48% • Internal Rate of Return (IRR) : 28,64% Based on the results of the economic analysis, it can be concluded that the preliminary design for the glucose syrup production plant from banana weevil using enzymatic hydrolysis is feasible for establishment.en_US
