Analisis Nilai Tambah pada Rantai Pasok Pengolahan Daging Sapi menjadi Bakso pada UKM Bakso Rizky
Abstract
Beef is a food ingredient that is often used as processed food. The types of preparations that are often found in beef are frozen foods, such as meatballs. Meatballs are a common food that is in great demand by various groups of people, therefore this processed food has a high demand value. Based on a survey of one of the meatball SMEs in Medan, namely Rizky Bakso UKM, it is known that the acquisition of added value in the supply chain is not optimal. As a result, supply chain actors do not carry out detailed cost calculations and lack understanding of the effect of added value on increasing their income. The purpose of this research is to find out the added value obtained by the company, which can be a recommendation for each supply chain actor to increase added value. This study uses data analysis, namely added value analysis with the Hayami Method. The results of this study showed that meat producers received an added value of Rp. 5,000 with a value-added ratio of 6.25%, butchers obtained an added value of Rp. 5,000 with a value-added ratio of 5.26%, SMEs received an added value of Rp. 41,141. 08 with an added value ratio of 20.57% and consumers obtain an added value of IDR 65,250.00 with a value added ratio of 32.63%.
